Baked fish with vegetables and rosemary


1 big whole fish
(grouper, red snapper, pike, sea bream, mullet)
3-4 sun dried tomatoes
2-3 bay leaves,
3 tbsp finely chopped parsley
3-4 medium onions sliced into thin rings
2 finely chopped garlic cloves
4 tbsp Terra Creta Extra Virgin Olive Oil
100 ml white wine
3 medium tomatoes peeled, seeded and chopped
Salt, pepper, 1 teaspoon rosemary
1/2 cup black olives (optional)

Clean fish, remove guts and stuff with parsley, bay leaves and sun dried tomatoes. Place in an oiled baking tray.

In a saucepan heat oil and brown onions lightly. Add garlic, tomatoes, wine, rosemary, olives, salt and pepper and simmer for 5 minutes.

Pour the sauce over and around the fish and bake in moderate heat for about an hour.
