Salad with greens

Ingredients (for two persons)

2 cups greens (chicory, rocket, lettuce, saw thistles)
1 finely chopped spring onion
3 tbsp Terra Creta Extra Virgin Olive Oil
1 tbsp vinegar or lemon juice
1 tbsp pomegranate seeds ( optional)

Wash greens, chop them and place in a salad bowl together with the onion.

Whisk olive oil with salt and vinegar or lemon juice and pour over the salad. Toss gently, add pomegranate seeds and serve.
