Invited by the Agricultural University of Athens, we had the opportunity to present and analyse our innovative "traceability tree" system for the olive oil. In Limenas Hersonissou, Crete, from 26 to 27 April 2007, took place the 3rd annual meeting of the TRACE project (tracing the origin of food) with partιcipants from many countries. The TRACE project is developing traceability methods and systems that will provide consumers with added confidence in the authenticity of European food through complete traceability along entire fork to farm food chains. In our lecture, we presented and analysed our worldwide inovvative "traceability tree" system for the olive oil, and we had the opportunity to be informed about the latest developments on the food traceability systems.
